Hello my lovelies! It’s time for a wild card where you never know what weird, wacky, wonderful, wistful topic I’ll pick to write about. It may be a topic I get lots of questions on, a cool timesaver, a new mom hack I discovered, a new product revelation, or a DIY idea. The list is endless.
So, without any further ado…this wild card topic is all about “What the heck is Forks Over Knives?”

I’m giving you an easy recipe that you can use as a side dish to your main meal or simply make it your main meal. It was one of the first recipes I tried and my daughter and parents loved it!

Here we go. Forks Over Knives…
First, it’s a movie you can watch (at the time of this writing) on both Netflix and Amazon Prime Video. I had already been watching documentaries on the negative impact of sugar and how certain types of food can slow and all but stop the debilitating disease of multiple-sclerosis (MS). I had no idea foods could heal!
Second, Forks Over Knives is a plant-based diet. It’s not vegan or vegetarian. It’s a plant-based whole foods diet. It does not include oils or meat (including fish and seafood), sugar, or processed foods. You use forks to eat these foods, rather than knives to cut (slaughter) meat.
For those of you who have checked out my website at www.Kristin-Ann.com, you would have read that for my whole adult life so far, my main food group was sugar - Twizzlers and donut holes to be exact.
I started eating better though because I had a little one that I was modeling good eating habits for, but I thought, “Wow, if I eat a plant-based, whole foods diet, I can also help to ensure that I’ve done everything possible to live a long and healthy life for my daughter." Obviously, anything can happen, you know, like that bus that people say can hit you (though I always look both ways). But, WOW, the data and results in Forks Over Knives were quite compelling, even knowing there may be some bias.
As a girl who grew up in Wisconsin eating meat and dairy, this plant-based, whole foods way of eating is very different. It went against my family lineage of beef, dairy, and pig farmers. Would my body reject a plant-based lifestyle? Lol.
As I was cleaning my home to make it more toxin-free, I also began eliminating toxins from my diet. I did NOT throw out any meats, milk or processed foods though. I had several of those items in my freezer, fridge and pantry, so as I would use them up, I did not replace them with the same items. It was more about me needing to reteach myself how to cook rather than going cold turkey. This was a big deal because I barely had just figured out how to cook for my daughter the “regular way” over the last 18 months and now I’m going to be cutting all these vegetables! I thought this was going to slow me way down.
I bought a Forks Over Knives cookbook because most online vegan and vegetarian recipes contain oils and sugars, which is not compatible with this plant-based diet. I found a couple I could modify to make them fit into the Forks Over Knives lifestyle and I’m sure you can too.
I started out with easier recipes that I thought a) I could handle cooking and wouldn’t take too long and b) that my two-year-old daughter and I would enjoy. During the first month, I’d weave in a few of these recipes, while we finished up eating the meats in the freezer. To my surprise, my daughter ate pretty much whatever I put on her plate. If it were a dish she’d never seen before, she wouldn’t eat much of it the first time. But, by the second or third serving, she gobbled it right up!
If this sounds too crazy or overwhelming, I’m right there with you. I remember watching Corey Booker, currently a Senator for New Jersey, during an interview. He said everyone should eat a meat-free diet and be plant-based only. I thought that was the craziest thing I had ever heard. How the heck would you get enough protein or calcium in your diet? His comments were so foo-foo. Fast forward two months and I started my own plant-based lifestyle journey. Whaaaat?
If you have similar concerns, watching the movie Forks Over Knives will answer those questions and more. It is truly eye-opening. Not only will you learn how a plant-based diet can reverse damage done by a poor diet, but also how much the food industry has influenced the food pyramid over the years.
And if you’re thinking you’ll be eating salads all the time, think again. Before I watched Forks Over Knives, I was leaning into this type of lifestyle and ate salads every day, which got boring real fast. You’ll be eating filling plant-based foods, not rabbit food, and you don’t need to count calories or nutrients because you’ll be getting them from the plants. I thought it would be much more expensive to eat this way. Umm, it’s not. Meat is way more expensive.
What were my results? Weight loss. I lost ten pounds in two months and didn’t even exercise. My schedule was so crazy, I couldn’t fit exercise in. I had a demanding job,I was starting my side business and I slept about 5-6 hours a night, sometimes 7…and I’m an 8-hour a night kind of girl. I seemed to be okay from less sleep and I was getting after my financial goals.
My parents visited for a week and everything I made was from the cookbook. Now, I didn’t tell them about my new lifestyle. I just made the food. I was afraid they wouldn’t like it or feel deprived, but they had second helpings, which wasn’t something they did when I was cooking the old way.
